Get over hump day with meatballs that are both beefy and healthy, then scoot into Thursday for a one-pan pasta where cauliflower takes a central role (it's also a 25-minute dinner, in case you're counting). Round out the week with a sheet-pan dinner that's both easy and healthy—if you didn't think you could have a sheet-pan meal with delicate fish filets, this recipe will surprise and delight you.

The recipe calls for grilling the boneless, skinless chicken breasts halves, we're staying inside and getting out the grill pan.
